5 Easy Meals You Can Make in the Microwave

Unless you are getting a culinary degree in college, most college students don’t enjoy or have time to cook a “home cooked” style meal every night am I right? So we came up with a few meal ideas that are easy and ready to eat in a few minutes. Plus they taste really good too!

“Baked” Sweet Potato

Sweet potatoes are cheap, delicious and healthy for you. Plus, they can be cooked in the microwave in half the time as baking one. Simply take your sweet potato, stab it with a fork multiple times, and stick it in the microwave for 8-10 minutes (It may take less or more time to cook depending on your microwave.) You will know it is cooked when you can poke your fork all the way through the sweet potato. You can fill you sweet potato with anything you like. Personally, I like black beans, plain non-fat Greek yogurt, a little cheese and salsa.

Grab a coffee mug, crack two eggs in it and cook it for one minute. It’s that easy. You can also add bell peppers, tomatoes or whatever spices you like to give it a little extra flavor.

Quesadilla

Gab a tortilla and place on a microwavable plate. Then place cheese, beans or veggies on the tortilla and then place a second tortilla on top. Microwave for 1-2 minutes or until cheese is melted. Then chow down!

Pancakes

Pancakes are good anytime of the day either for breakfast, lunch or dinner. All you have to do is mix a regular pancake mix together pour about ¾ cup onto a greased plate and microwave for 1 minute. Top these with your favorite condiments. Yum!

Pasta

Add a cup of pasta shells into ½ cup of water in a mug. Then microwave for a 2-3 minutes or until pasta is soft. Then pour your favorite tomato or Alfredo sauce on top. Dinner is served!
