Pamela Holmes prepared her first Thanksgiving meal at the age of 9 years old. As one of 11 children, Ms Holmes was taught how to prepare deeply satisfying soul food recipes by both of her Mississippi born parents.Ms Holmes has been cooking for as long as she can remember. "We cooked every meal every day. There is no eating out with a family that size. My parents were exceptional cooks but unfortunately because of the way they ate, they both suffered from severe cardiovascular disease with both eventually having massive strokes." This happened at a time when Pamela was a pharmaceutical sales representative selling treatments for high cholesterol and hypertension. "I decided then and there… that I would treat my body differently. I started reinterpreting the meals I prepared with a healthy twist--lower fat, lower cholesterol. That is what this book is all about. Our motto is "fast, healthy and delicious." I am a devoted foodie and find comfort in the fact that the longer you live, the more you get to eat." The Pamela M Holmes YouTube Channel features over 30 demonstrations of recipes found in the book. The channel has approximately 200,000 visits and Ms Holmes has been asked to be a YouTube partner because of the success of the channel. "My goal with the channel and the book was to recreate soul food favorites and present them with all of the flavor and far less fat. I am proud that the food tastes good, otherwise what's the point!"
