    En la region andina noroeste de Argentina, en la provincia de Salta, se encuentran los Valles Calchaquies, donde diversas bodegas producen vinos finos y regionales, en especial blancos variedad "Torrontes," caracteristicos por su delicado y peculiar aroma frutal y fresco. Se estudio la distribucion geografica taxonomica de las levaduras autoctonas, en las uvas se encontraron las especies Kloeckera apiculata, Candida friedrichii y Candida famata; mientras que en los mostos el genero Saccharomyces se mantuvo en 50% durante la fermentacion tumultuosa sobre Dekkera, Kloeckera y Candida con predominancia de la especie Saccharomyces cerevisiae. Se seleccionaron 7 levaduras killer K2, con estabilidad ante la variacion de pH, con velocidades especificas de crecimiento competitivas para un starter. La levadura aislada a los 10 dias del proceso fermentativo presento las mejores caracteristicas como cultivo starter, no produjo sulfuro de hidrogeno, buena floculacion, dando un vino con pH de 4,10, acidez total de 6,2 g / L en acido tartarico, con un residuo de 5 g / L de azucar, grado alcoholico de 13,4 % v / v con sabor fresco y frutado."
